Corn Salad

This is a super easy side salad that is great for summertime and picnics. We made this recipe over the weekend to bring to a friends house and it paired great with the chicken and steak on the grill. I listed cilantro as an alternative to the parsley and we had a taste test to see which we preferred. Everyone surprisingly liked the parsley version better, but feel free to test this option on your own!

The one-ingredient dressing can’t get any easier and the apple cider vinegar balances well with the sweetness of the corn and peppers. This is a perfect option when you are short on time but need to bring dish. I hope you try this recipe at your next BBQ!

Ingredients

  • Five ears of corn
  • One red pepper (diced)
  • Three green onions (1/4 cup diced)
  • 1/2 cup fresh parsley (or cilantro)
  • 2 Tbsp. apple cider vinegar
  • Salt & pepper to taste

Directions

  1. Boil the corn for 15 minutes and allow to cool.
  2. While the corn is boiling, dice up red pepper, onion, and parsley.
  3. Cut kernels off of the cob and mix in a bowl with the peppers, onions and parsley.
  4. Add vinegar, salt and pepper and allow to marinate in the refrigerator for a couple of hours before serving.
  5. You can add more or less vinegar depending on your taste.

      Thank you for your message, no bother at all! I have had a lot of questions about the floor so I definitely need to update my post. Our floors are a water resistant laminate from Floor & Decor. The brand is AquaGuard and color is Rustic Timber. We love them so far, very easy to install and maintain.
