This is a family recipe passed down from my grandmother. It is GOOD and always a hit at parties. The only bad part of this recipe is waiting to eat it, because the secret is letting it marinade overnight!

Chicken Salad With Walnuts
Ingredients
- 4 Boneless, skinless chicken breasts
- Salt & Pepper
- 3 Tbsp. olive oil
- 1/2 cup chopped parsley
- 1/4 chopped green onions
- 1/2 cup chopped celery
- 1/3 cup chopped walnuts
- 1/3 cup light mayo (or to taste)
Directions
- Season chicken breasts with salt and pepper and then bake in the oven at 400 degrees for 20 minutes, or until the internal temperature reaches 165 degrees.
- Let the chicken cool and chop up the green onions and parsley.
- Once cool, cut up chicken into cubes and place into a bowl.
- Mix chicken with olive oil, parsley & green onion.
- Cover bowl, or put mixture into a Freezer bag and place in the refrigerator overnight (VERY IMPORTANT)
- The Next Day: Pour chicken mixture into a bowl and mix with mayo, walnuts & Celery.
- Serve on a salad or sandwich.
