The BEST Chicken Salad

This is a family recipe passed down from my grandmother. It is GOOD and always a hit at parties. The only bad part of this recipe is waiting to eat it, because the secret is letting it marinade overnight!

Chicken Salad With Walnuts

Ingredients

  • 4 Boneless, skinless chicken breasts
  • Salt & Pepper
  • 3 Tbsp. olive oil
  • 1/2 cup chopped parsley
  • 1/4 chopped green onions
  • 1/2 cup chopped celery
  • 1/3 cup chopped walnuts
  • 1/3 cup light mayo (or to taste)

Directions

  1. Season chicken breasts with salt and pepper and then bake in the oven at 400 degrees for 20 minutes, or until the internal temperature reaches 165 degrees.
  2. Let the chicken cool and chop up the green onions and parsley.
  3. Once cool, cut up chicken into cubes and place into a bowl.
  4. Mix chicken with olive oil, parsley & green onion.
  5. Cover bowl, or put mixture into a Freezer bag and place in the refrigerator overnight (VERY IMPORTANT)
  6. The Next Day: Pour chicken mixture into a bowl and mix with mayo, walnuts & Celery.
  7. Serve on a salad or sandwich.
